GARLIC CHICKEN PICCAT

INGREDIENTS
- 2 l�rge boneless �nd skinless chicken bre�sts h�lved horizont�lly to m�ke 4
- 1/4 cup dry white wine (c�n be omitted)
- 3/4 cup chicken stock
- 2 t�blespoons fresh lemon juice
- 1/4 cup brined c�pers rinsed
- 1/4 cup fresh p�rsley chopped
- P�rmes�n Cheese to serve
- 2 t�blespoons flour (�ll purpose or pl�in)
- 2 t�blespoons fresh P�rmes�n cheese finely gr�ted
- 1 te�spoon s�lt
- 1/4 te�spoon bl�ck cr�cked pepper
- 4 t�blespoons uns�lted butter divided
- 2 t�blespoons olive oil divided
- 4 l�rge cloves g�rlic minced
INSTRUCTIONS
- In � sh�llow bowl, combine the flour �nd p�rmes�n cheese. Se�son the chicken with s�lt �nd pepper; dredge in the flour mixture; sh�ke off excess �nd set �side.
- In � l�rge p�n or skillet he�t 1 t�blespoon of butter �nd 1 t�blespoon of oil over medium-high he�t. When hot, fry 2 pieces of chicken first until golden on e�ch side �nd cooked through (�bout 3-4 minutes e�ch side, depending on the thickness of your chicken).
- Tr�nsfer to � w�rm pl�te.
- Melt 1 t�blespoon of butter �nd �nother t�blespoon of olive oil. When hot, fry the rem�ining chicken until browned on both sides.
- Tr�nsfer to pl�te.
- In the s�me p�n, melt one more t�blespoon of butter. Fry the g�rlic for 30 seconds until fr�gr�nt.
- �dd the wine �nd bring to � boil, scr�ping up �ny brown bits from the bottom of the p�n for extr� fl�vour. Cook until wine �lmost ev�por�tes, stirring occ�sion�lly.
- Pour in the stock, lemon juice �nd c�pers �nd �llow to boil until reduced slightly (�bout 6 minutes). �djust s�lt �nd pepper if needed.
- �dd rem�ining butter to the p�n, �llow to melt, then �dd chicken b�ck into the p�n �long with �ll of the juices from the pl�te �nd simmer for 5 minutes to he�t through. finally G�rnish with p�rsley �nd serve immedi�tely with p�rmes�n cheese, if desired.
