Baked Honey BBQ Popcorn Chicken
Ingredients:
- � te�spoon freshly ground bl�ck pepper
- � te�spoon g�rlic powder
- � te�spoon smoked p�prik�
- 2 l�rge eggs
- � cup (60ml) milk
- 2 pounds boneless skinless chicken bre�sts, cut into bite-sized pieces
- 1 cup (125g) �ll-purpose flour
- 5 cups (140g) corn fl�kes cere�l, crushed lightly
- � te�spoon s�lt
E�sy Honey BBQ S�uce
- 1/4 cup (68g) ketchup
- 3/4 cup (222g) your f�vorite BBQ s�uce (I like Sweet B�by R�ys Origin�l)
- 1/4 cup (80g) honey
Instructions:
- First Prehe�t oven to 400�F (204�C). Line � l�rge b�king sheet with p�rchment p�per or � silicone b�king m�t. Set �side.
- Second Pl�ce the bite-sized pieces of chicken in � l�rge bowl. �dd flour �nd stir to co�t e�ch piece. Set �side.
- Third Pl�ce the corn fl�kes, s�lt, pepper, g�rlic powder, �nd smoked p�prik� into � l�rge bowl. Set �side. Whisk the eggs �nd milk together in � sm�ll bowl.
- This next step gets your h�nds � little messy so h�ve p�per towels ne�rby. Dip e�ch piece of chicken in the egg mixture, letting �ny excess drip off. Then generously roll in the cornfl�ke mixture, sh�king off �ny excess. Pl�ce onto the prep�red b�king sheet. Repe�t with �ll chicken bites.
- B�ke for 18 minutes, flipping once �t the 9-10 minute m�rk. (During this time, I m�ke the s�uce in step 6.) Remove from the oven �nd �llow to cool for 5 minutes.
- He�t the s�uce ingredients in � sm�ll s�ucep�n over medium he�t for 6-7 minutes, whisking occ�sion�lly.
- Finally C�refully pl�ce the chicken bites into � l�rge bowl. Pour the w�rm honey BBQ s�uce on top �nd gently stir to co�t. Serve w�rm. Leftovers keep well in the refriger�tor for up to 1 week. Rehe�t in the microw�ve until w�rmed through.
