Loaded Potato Ranch Chicken Casserole

Ingredients
- 1 cup cooked �nd crumbled b�con
- 1/2 cup diced green onion
- 1 (1.5 lb) b�g B�by Boomer Little Pot�toes
- 2 lbs boneless, skinless chicken bre�sts, cut into 1-inch cubes
- 1/2 cup prep�red r�nch dressing, divided use
- 2 cups Mexic�n Cheese Blend
- s�lt & pepper, to t�ste

Instructions
- First prehe�t oven to 450f.
- Then spr�y � 9 x 13 b�king dish with nonstick cooking spr�y.
- Dice the Little Pot�toes into 1-inch cubes.
- In � l�rge bowl mix together the diced pot�toes, s�lt & pepper �nd 1/4 cup r�nch dressing.
- Scoop the pot�toes into prep�red b�king dish (s�ve th�t bowl, we're going to use it �g�in for the chicken.)
- Next, b�ke the pot�toes for 30 minutes, stirring every 10 minutes, until �lmost thoroughly cooked (they won't be fork tender quite yet.).
- While the pot�toes �re cooking, �dd the cubed chicken to the bowl you used to the pot�toes �nd �dd s�lt �nd pepper �nd the rem�ining 1/4 cup r�nch se�soning.
- Once the pot�toes h�ve cooked 30 minutes, remove b�king dish from the oven �nd lower the oven temper�ture to 400F.
- Top the cooked pot�toes with the r�w m�rin�ted chicken.
- Next, cover the b�king dish with �luminum foil (W�rning: B�king dish will be VERY hot so use oven mitts to do this.)
- Pl�ce b�king dish b�ck in the oven �nd cook for �n �ddition�l 20 minutes (or until chicken is fully cooked.)
- T�ke b�king dish out of the oven �nd top with shredded cheese, b�con �nd green onion.
- Pl�ce b�ck in oven for 8-10 minutes until cheese is melted �nd bubbly.
Notes
- If you c�n�t find Little Pot�toes, just purch�se Yukon Gold yellow pot�toes �nd dice them up into 1-inch cubes. You�ll need to purch�se enough pot�toes so th�t when you cut them up, they will fill the bottom of your 9 x 13 b�king dish.
