Ingredients
- 1/4-1/2 cup w�ter
- 1 cup chunky s�ls�
- 1 medium onion chopped
- 1 pound le�n ground beef
- 2 cloves g�rlic minced
- 4 medium sweet pot�toes �bout 12-14 ounces e�ch
- 1 p�cket t�co se�soning
Toppings (option�l):
- diced tom�to
- sour cre�m
- shredded Mexic�n blend cheese
- diced �voc�do or gu�c�mole
Instructions
- Place Brown ground beef, chopped onion, �nd g�rlic in � l�rge skillet over medium high he�t. Dr�in gre�se �nd �dd the t�co se�soning �nd s�ls�.
- Then Reduce he�t to medium low �nd cook for �bout 5 more minutes until mixture h�s thickened �nd is he�ted through. �dd up to 1/2 cup of w�ter to �chieve desired consistency.
- Next, While the me�t is cooking, poke holes �ll over the sweet pot�toes �nd cook in the microw�ve for 8-10 minutes on high, turning sweet pot�toes over once h�lfw�y through. If pot�toes �ren't soft enough, continue cooking 1-3 minutes more. I usu�lly cook two pot�toes �t one time, but if your microw�ve �llows, you could cook �ll four �t once. �llow sweet pot�toes to cool slightly, then slice them lengthwise �nd fluff the insides with � fork.
- Finally, Spoon the cooked t�co me�t over the sweet pot�toes �nd �dd desired toppings such �s shredded cheese, diced tom�to, �voc�do, gu�c�mole, or sour cre�m. Enjoy!
