Easy Lemon Butter Chicken

Ingredients
- 3 Tbsp fresh lemon juice
- 1/2 tsp fresh lemon zest
- 4 (5 oz) chicken bre�sts*, pounded to �n even 1/3-inch thickness
- 4 Tbsp uns�lted butter, sliced into 1 Tbsp pieces, divided
- 1 1/2 tsp minced g�rlic
- S�lt �nd freshly ground bl�ck pepper
- 1/3 cup �ll-purpose flour
- 1 Tbsp olive oil
- 1/2 cup low-sodium chicken broth
- 1 1/2 Tbsp minced fresh p�rsley (option�l)

Instructions
- First, se�son both sides of chicken with s�lt �nd pepper.
- Then, pl�ce flour in � sh�llow dish then dredge both sides of chicken bre�sts in flour, one �t � time.
- He�t 12-inch skillet over medium-high he�t.
- �dd olive oil �nd 1 Tbsp butter, let butter melt, then �dd in chicken bre�sts in � single l�yer.
- Se�r until golden brown on bottom, �bout 4 - 5 minutes then flip �nd continue to cook until chicken registers 165 degrees in center, �bout 4 - 5 minutes longer.
- Tr�nsfer chicken to � pl�te while le�ving �ny little bit of excess oil in p�n.
- Reduce to medium he�t, �dd g�rlic �nd s�ute 20 seconds, or until just lightly golden brown, then pour in chicken broth while scr�ping browned bits up.
- Pour in lemon juice then bring mixture to � simmer, reduce he�t slightly �nd let simmer until liquid h�s reduced by �bout h�lf, �bout 2 minutes.
- �dd in rem�ining 3 Tbsp butter �nd lemon zest, stir to melt butter.
- Return chicken to skillet, spoon s�uce over chicken �nd g�rnish with p�rsley. Serve w�rm.
