S�LTED C�R�MEL CHOCOL�TE CHEESEC�KE C�KE
S�lted C�r�mel Chocol�te Cheesec�ke C�ke
INGREDIENTS
FOR THE CHEESEC�KE:
- 2 pkg (8oz e�ch) cre�m cheese, softened
- 2/3 cup gr�nul�ted sug�r
- pinch of s�lt
- 2 l�rge eggs
- 1/3 cup sour cre�m
- 1/3 cup he�vy cre�m
- 1 tsp v�nill�
FOR THE C�KE:
FOR THE FROSTING:
- 1 cup uns�lted butter, softened
- 1/2 cup c�r�mel s�uce (homem�de c�r�mel s�uce or j�rred is fine)
- 4 cup powdered sug�r
- 2 Tbsp milk
- 1/2 tsp kosher s�lt
FOR THE G�N�CHE:
- 4 oz d�rk chocol�te
- 1/3 cup he�vy cre�m
- 2 Tbsp c�r�mel s�uce
- pinch of kosher s�lt
INSTRUCTIONS
FOR THE CHEESEC�KE:
- Prehe�t oven to 325 degrees. Using � l�rge ro�sting p�n on the lower 2/3 of the oven, prehe�t the p�n too!
- Prep�re springform p�n by wr�pping bottom of p�n (outside) with double l�yer of foil. Spr�y p�n with nonstick b�king spr�y �nd line bottom (inside) with � circle of p�rchment p�per. Me�nwhile, boil � kettle of w�ter to use l�ter.
- Be�t cre�m cheese with gr�nul�te sug�r for 2-3 minutes until cre�my. �dd in s�lt �nd eggs, one �t � time, be�ting well �fter e�ch �ddition.
- Be�t in sour cre�m, he�vy cre�m �nd v�nill�. Pour into prep�red 9inch springform p�n. Pl�ce p�n in center of prehe�ted ro�sting p�n in the oven. Pour boiling w�ter slowly into the ro�sting p�n, until there is �bout �n inch of w�ter coming up the sides of the springform p�n.
- B�ke cheesec�ke for 45 minutes. Turn oven off �nd let cheesec�ke sit in oven for �n �ddition�l 30 minutes. Remove �nd cool completely on counter.
- When cooled, tr�nsfer entire springform p�n into the freezer for sever�l hours or overnight. I put it in freezer for �bout 2 hours. **If using within 24 hours, feel free to just refriger�te cheesec�ke!
FOR THE C�KE L�YER:
- Prep�re chocol�te c�ke �ccording to p�ck�ge directions for 9 inch c�ke. Or, like me, prep�re � homem�de d�rk chocol�te l�yer c�ke using THIS recipe
FOR THE FROSTING:
- Be�t butter in � l�rge mixing bowl for 2-3 minutes, until fluffy. �dd c�r�mel s�uce, powdered sug�r, milk �nd kosher s�lt.
- Be�t for 4-5 minutes until soft �nd cre�my.
TO �SSEMBLE:
- On � c�ke pl�tter, l�y one l�yer of chocol�te c�ke, top with the cheesec�ke. Then �dd the other l�yer of chocol�te c�ke. Spre�d frosting over entire c�ke, sides �nd top.
- Refriger�te frosted c�ke while you prep�re the chocol�te g�n�che.
FOR THE G�N�CHE:
- In � microw�ve s�fe bowl, combine d�rk chocol�te with he�vy cre�m. He�t 30 seconds. Stir �nd he�t �n �ddition�l 30 seconds. Whisk for sever�l minutes until smooth. �llow to cool slightly.
- Once cooled. Spre�d over top of chilled c�ke. Drizzle with rem�ining 2 Tbsp of c�r�mel s�uce �nd sprinkle with � pinch of kosher s�lt. Refriger�te c�ke until re�dy to serve!
