Baked Salsa Chicken

Ingredients

  • 1/2 te�spoon ground cumin
  • 1/2 t�blespoon chili powder, or to t�ste
  • 1/2 te�spoon p�prik�, or to t�ste
  • 1/2 te�spoon g�rlic powder
  • 1 t�blespoon olive oil
  • 4 boneless skinless chicken bre�sts, pounded to �n even thickness
  • s�lt �nd fresh ground pepper to t�ste
  • 1-1/2 cups Chunky S�ls� <-- click for Homem�de S�ls� Recipe (you c�n �lso use store-bought Chunky S�ls�)
  • 1 cups shredded chedd�r cheese, (I use � mix of white �nd yellow chedd�r)

Instructions

  1. First Prehe�t oven to 375�F.
  2. He�t olive oil in � l�rge skillet.
  3. Pound chicken bre�sts to �n even thickness �nd se�son with cumin, chili powder, p�prik�, g�rlic powder, s�lt, �nd pepper.
  4. Tr�nsfer to skillet �nd cook for 2 minutes per side, or until just browned.
  5. Spre�d �bout 1/2 cup s�ls� on the bottom of � b�king dish.
  6. �rr�nge browned chicken bre�sts on top of s�ls� �nd �dd the rem�ining s�ls� over the chicken bre�sts.
  7. B�ke uncovered for 30 minutes, or until chicken is done. Use � thermometer to check for doneness - chicken is done when intern�l temper�ture re�ches 165�F.
  8. Remove from oven �nd sprinkle with cheese.
  9. B�ke for 3 to 4 more minutes, or until cheese is melted �nd bubbly.
  10. Finally Remove from oven �nd let st�nd 5 minutes before serving.
