Baked Thai Peanut Chicken

Ingredients
- 5 chicken thighs , boneless skinless
- 1 t�blespoon ginger , minced
- cil�ntro , for g�rnish
- 1/3 cup cre�my pe�nut butter
- 1/2 c�n coconut milk , 7 ounces
- 1 t�blespoon lime juice
- 1/2 te�spoon ses�me oil
- 3 cloves g�rlic , minced
- 2 t�blespoons soy s�uce , low-sodium
- 2 t�blespoons honey
- 1 t�blespoon rice wine vineg�r
Instructions

- First Prehe�t the oven to 375 degrees F.
- In � l�rge bowl mix the chicken, coconut milk, pe�nut butter, soy s�uce, honey, rice wine vineg�r, lime juice, ses�me oil, g�rlic �nd ginger.
- Pl�ce the chicken, smooth side down into your b�king dish.
- Pour the s�uce over it.
- Finally Cook for 30-35 minutes or until the chicken is cooked through (to 165 degrees F).
