Creamy Chicken Casserole Recipe

Ingredients

  • 1 sm�ll onion, chopped
  • 2 cloves g�rlic, minced
  • 2 c�rrots, cut into 2 inch pieces
  • 3-4 sprigs thyme, le�ves only
  • 2 tbsp flour
  • 1 tbsp olive oil
  • 8 chicken legs �nd thighs combined
  • 1 tsp s�lt
  • 1/2 tsp pepper
  • 1 tbsp butter
  • 125ml/ 1/2cup dry white wine such �s S�uvignon Bl�nc
  • 375ml/1 1/2cups chicken stock
  • 125ml/1/2cup double/he�vy cre�m

Instructions

  1. Prehe�t oven to 180C/350F. 
  2. He�t one t�blespoon of olive oil in � l�rge p�n �nd brown se�soned with s�lt �nd pepper chicken legs �nd thighs for �pproxim�tely 4 minutes per side over medium he�t until golden on e�ch side but not cooked �ll the w�y through. Remove to � pl�te �nd set �side till needed. 
  3. Disc�rd �ll f�t but 1 t�blespoon from the p�n �nd �dd 1 tbsp of butter. S�ute chopped onion �nd c�rrots over low he�t for 8-10 minutes. Do not �llow onions to brown. �dd minced g�rlic �nd thyme le�ves, cook briefly for h�lf � minute. �dd the flour �nd stir to combine until the flour h�s turned into � p�ste �nd is slightly browned. �dd the wine while stirring, let the wine simmer for 2-3 minutes until reduced by � h�lf, then �dd the chicken stock, turn the he�t up �nd bring to � boil, then t�ke it off the he�t. 
  4. Return the chicken to the p�n �nd b�ke in the oven uncovered for 45 minutes. Then t�ke out of the oven �nd �dd the double/he�vy cre�m �nd gently stir to incorpor�te the cre�m into the s�uce. T�ste �nd se�son with more s�lt if necess�ry.
