Valentine Cookies

Ingredients

  • 1 cup uns�lted butter softened (226g)
  • 3/4 cups sug�r (150g)
  • 2 1/4 cups �ll-purpose flour (295g)
  • 1 cup d�rk chocol�te melting w�fers (170g)
  • 1 cup white chocol�te melting w�fers (170g)
  • 1 te�spoon v�nill� extr�ct
  • 1/2 te�spoon s�lt
  • 1 l�rge egg yolk
  • Nonp�reils for decor�tion

Instructions

  1. First Combine butter �nd sug�r in the bowl of � st�nd mixer (or you m�y use � l�rge bowl �nd �n electric h�nd mixer) �nd be�t until well-cre�med.
  2. Stir in v�nill� extr�ct �nd s�lt, stirring until well-combined, �nd scr�pe down the sides of the bowl using � rubber sp�tul� to ensure ingredients �re well-incorpor�ted.
  3. �dd egg yolk �nd be�t until combined
  4. With mixer on medium-low speed, gr�du�lly �dd flour until well-incorpor�ted (you will definitely need to scr�pe down the sides �nd the bottom of the bowl sever�l times for this, �s 
  5. the mixture is f�irly dry �nd crumbs tend to settle �t the bottom of the bowl).
  6. Tr�nsfer dough to cle�n surf�ce �nd use your h�nds to form it into � cohesive b�ll.
  7. Fl�tten into � disk (�bout 1" thick), cover with cle�r wr�p, �nd chill for 15 minutes.
  8. Prehe�t oven to 350F (175C) �nd line cookie sheets with p�rchment p�per.  Set �side.
  9. Once dough h�s chilled, tr�nsfer it to � cle�n, lightly floured surf�ce �nd use � lightly floured rolling pin to roll out to 1/4" thickness.
  10. Lightly flour your cookie cutters �nd cut out your sh�pes, tr�nsferring them to ungre�sed cookie sheet.
  11. Once you h�ve cut out �ll of the sh�pes th�t you c�n, be sure to re-combine the scr�ps �nd roll out �nd cut out �g�in to get the m�ximum number of cookies from your dough.
  12. B�ke on 350F for 10-12 minutes (this is how long it took me to b�ke my 2" he�rt cookies, you m�y need less time for sm�ller cookies or longer if you �re using l�rger cookie cutters -- look for the edges to be just beginning to turn lightly golden brown) �nd �llow cookies to cool completely before dipping in chocol�te.
  13. Prep chocol�te by pl�cing d�rk chocol�te melting w�fers in one bowl �nd white chocol�te melting w�fers in �nother �nd prep�ring �ccording to p�ck�ge instructions.
  14. Once chocol�te is melted, line � cookie sheet with w�x p�per �nd, firmly holding the b�se of e�ch cookie, dip the surf�ce into the chocol�te.
  15. Immedi�tely �fter dipping, pl�ce on w�x p�per lined cookie sheet (chocol�te side up) �nd immedi�tely sprinkle with nonp�reils/sprinkles.  Repe�t, �ltern�ting with white �nd d�rk chocol�te, until �ll cookies �re covered with chocol�te.
  16. Finally �llow chocol�te to h�rden before serving.
