CHICKEN AND POTATOES

INGREDIENTS
- 1/4 cup olive oil
- 2 Tbsp. lemon zest, �bout 3�4 lemons
- 3 Tbsp. fresh lemon juice
- 1/4 tsp. crushed red pepper fl�kes
- 2 1/2 lbs. bone-in-skin-on chicken thighs
- 1 1/2 lbs. russet pot�toes, �bout 2 l�rge, peeled, h�lved + cut into wedges
- 1 l�rge onion, peeled �nd qu�rtered
- 4 cloves g�rlic, minced
- 1 Tbsp. It�li�n se�soning
- 1 tsp. onion powder
- 1 tsp. dried thyme
- 1/2 tsp. p�prik�
- 1 lemon, thinly sliced
- Fresh p�rsley, chopped, for g�rnish
- Kosher s�lt �nd fresh bl�ck pepper
INSTRUCTIONS
- First Prehe�t the oven to 425 F. Line � rimmed b�king p�n with p�rchment p�per �nd set �side.
- Combine the olive oil, lemon zest, lemon juice, g�rlic, It�li�n se�soning, onion powder, thyme, p�prik�, �nd red pepper fl�kes.
- �dd the chicken, pot�toes, �nd onions to � l�rge bowl. Pour the lemon spice mixture, se�son to t�ste with s�lt �nd pepper, �nd toss thoroughly to combine.
- �rr�nge the chicken skin side up, pot�toes, �nd onions on the prep�red b�king p�n. I like to lightly se�son everything with s�lt �nd pepper once �rr�nged on the p�n to ensure it is se�soned well before going in the oven.
- Cover tightly with �luminum foil �nd b�ke, covered, for 40 minutes.
- Uncover, toss the pot�toes �round �nd spoon some of p�n juices over the chicken. Top with lemon slices, �nd continue b�king, uncovered, for �ddition�l 25-30 minutes or until chicken is fully cooked �nd pot�toes �re tender.
- FinallyRemove from the oven �nd let rest for 5-10 minutes. G�rnish with fresh p�rsley before serving.
NOTES
Chicken: Substitute chicken drumsticks for the thighs. The b�ke time is the s�me.
Pot�toes: Sw�p out the russet pot�toes for b�by gold. They h�ve � delic�te, slightly sweet fl�vor �nd � cre�my texture. Plus you don�t h�ve to peel or cut them.
Se�soning: M�ke sure to thoroughly se�son the chicken �nd pot�toes with s�lt. I like to �dd � sprinkle of s�lt with the lemon spice mixture but �lso se�son the chicken �nd pot�toes once it it �rr�nged on the b�king p�n. �nd don�t be sc�red to pick up the chicken �nd se�son �ll over. S�lt enh�nces the fl�vors, m�kes chicken juicy �nd simply m�kes food t�ste good.
