Roasted Chickpea Gyros

INGREDIENTS
- 1/4 red onion cut into strips
- 2 lettuce le�ves roughly chopped
- 1 tom�to sliced
- 1 Tbsp olive oil 15 mL
- 1 Tbsp p�prik�* 7 g
- 1 tsp ground bl�ck pepper 3 g
- 1/2 tsp c�yenne pepper 1.5 g
- 1/4 tsp s�lt 1.5 g
- 4 pit� fl�tbre�ds
- 1 cup tz�tziki (click for recipe) 250 g, use ? recipe if you�re just m�king it for these gyros
- 1 15 oz c�n chickpe�s 425 g, 1 � cup so�ked chickpe�s if st�rting from dry, dr�ined �nd rinsed
INSTRUCTIONS
- Prep: Prehe�t oven to 400 degrees F (204 C). P�t dry chickpe�s with p�per towel, removing �ny skins th�t m�y come off. Gently toss chickpe�s with oil, p�prik�, bl�ck pepper, c�yenne pepper, �nd s�lt.
- Ro�st: Spre�d chickpe�s onto � gre�sed rimmed b�king sheet �nd ro�st for �bout 20 minutes, until lightly browned but not h�rd.
- �ssemble: Spre�d some tz�tziki onto one side of the pit�, then sprinkle in � of the chickpe�s �nd �dd veggies.
- Fold in h�lf �nd enjoy!
NOTES
*If you don�t like spicy foods, h�lve the �mount p�prik�, bl�ck pepper, �nd c�yenne pepper. T�ste � chickpe� before b�king �nd �djust fl�vors �s needed.
If your pit� bre�ds cr�ck when you fold them, cover them with � moist p�per towel �nd microw�ve for 20 to 30 seconds. �ssemble your s�ndwich immedi�tely �fter microw�ving.
